Step 1: Identify the tendon on the chicken and stick it between the teeth of a fork. Grab it with a paper towel and pull to remove. Step 2: Combine the buttermilk with pickle juice and hot sauce and add the chicken. Marinate for at least an hour. Step 3: Combine the all purpose flour with potato starch, smoked paprika, garlic powder, chili powder and salt and pepper. Step 4: When the chicken has marinated, take it out of the buttermilk and let some of it drip into the flour mixture to create crispiness. Add the chicken and press the flour into the chicken making sure its fully coated. Fry at 350 degrees F for 7 minutes. FOR THE SAUCE: Combine all ingredients (melted butter, BBQ sauce, honey, hot sauce) in a pan and bring to a boil. Turn off heat, and coat the chicken strips with the sauce.
