Step 1: Slice a smoked sausage link on an angle and pan fry it on both sides for about 3 minutes or until lightly browned. Take it out and set it aside. Step 2: Add the chili to a medium high skillet and cook for a few minutes or just until the chili is warmed through. Step 3: Add the cooked sausage link to the perimeter and mix in 1 sliced jalapeño. Step 4: After a few minutes, place 2 eggs into the center of the chili and cover it for 3-5 minutes or just until the eggs have set. Step 5: Sprinkle on some cheese, followed by the chopped chives. Hit it with some fresh cracked black pepper and enjoy.
