Cook the bacon for a few minutes just until the bits become crispy. Extract the grease from the bacon. Use some of the residual grease to cook the onions for about 5-8 minutes. In another bowl, combine the brown sugar, maple syrup, balsamic vinegar, water and bourbon. Add the boozy mixture to the onions and cook for another 5-8 minutes just until it has thickened. Add the bacon bits and continue to cook. Transfer to a food processor to create more jam-like consistency. Transfer to a mason jar. This will last about 2 weeks in the fridge.
