This Scallion Pancake Hack uses only egg roll wrappers, scallions, water, and oil to create crispy, tasty scallion pancakes. This recipe is part of a 4-part series.

1. Using the top of a saucepan or pot, trace a circle around 6 egg roll wrappers and cut them into circles. 2. Add a bit of water on the first egg roll wrapper, and then add about 1/4 cup of scallions on top, trying to evenly spread them on the egg roll wrapper. 3. Add another egg roll wrapper on top and add some water, and add another 1/4 cup of scallions. Repeat this until you have all 6 egg roll wrappers stacked. Then, using a rolling pin, roll it until all the layers form one cohesive pancake. 4. Heat about 1/2 cup of neutral cooking oil to medium-high. Fry the pancake for 3 minutes each side. Immediately season with salt.
