Step 1: Identify the tendon on the chicken tenders and stick it between the teeth of a fork. Grab it with a paper towel and pull to remove. Step 2: Combine 2 cups buttermilk with 1/4 cup lemon juice, 2 cups lemon pepper marinade, 1/4 cup black pepper, and 1/4 cup hot sauce in a bowl. Add the chicken tenders to the mixture and marinate for at least an hour. Step 3: In a separate bowl, combine 2 cups all purpose flour with 1 cup potato starch, 2 tbsp smoked paprika, 2 tbsp garlic powder, 2 tbsp chili powder, 2 tbsp black pepper, and 1 tsp salt and 1 tsp pepper. Step 4: When the chicken has marinated, take it out of the buttermilk mixture and let some of the buttermilk drip into the flour mixture to create crispiness. Add the chicken tenders to the flour mixture and press the flour into the chicken, making sure it is fully coated. Fry the coated chicken at 350 degrees F (175 degrees C) for 7 minutes. FOR THE SAUCE: Combine 1/4 cup melted butter, 1 cup lemon pepper sauce, 1/4 cup honey, and 2 tbsp hot sauce in a pan. Bring the mixture to a boil. Turn off the heat once it boils, and coat the fried chicken strips with the sauce.
