Dice a potato into small pieces and add it to a pot of boiling salted water. Boil for 10 minutes and drain. Add the pork chorizo to a frying pan and break it up into small pieces. Cook for about 5 minutes just until no raw meat is showing. Medium dice an onion and add it to the cooked pork, continue to cook for about 3 minutes. Then, add a little sweetness by mixing in 1/4 cup of honey. When the honey is fully mixed, add the potatoes and continue to cook for 5 minutes. In the meantime, cut the top off a piece of ciabatta bread, use your hands to scoop out the interior bread and set it aside. Whisk together 4 eggs, 1 cup of a cheese blend like mozzarella, cheddar and pepper jack, and then 1 cup of the pork and potato mixture. Add about 1/2 cup of the egg and pork to the hollowed out piece of bread. Place it in an air fryer for 7 minutes at 300 degrees F or an oven at 350 degrees F for 5 minutes. Garnish with lime juice and chopped cilantro.
