A healthy Whole30-approved Chicken Souvlaki Bowl featuring marinated chicken, roasted potatoes, a fresh Greek salad, and a homemade dairy-free tzatziki.

Step 1: Combine all the ingredients for the chicken marinade and coat the chicken, covering it for at least 2 hours or overnight. Step 2: When the chicken is marinated, cook for 5 minutes on one side, and 3 minutes on the other. Step 3: Coat the potatoes in olive oil, oregano, salt and pepper and roast at 425 degrees F for 25-35 minutes. Step 4: Combine all the salad ingredients in a bowl and toss with the dressing. Let marinate and occasionally toss all ingredients together. Step 5: Using an immersion blender, mix together the oil, egg, mustard, and lemon juice to create mayonnaise. Step 6: Combine the mayonnaise with coconut cream, grated and drained cucumber, minced garlic, lemon juice, dill, and salt and pepper.
