A recipe for candied bacon, similar to Tanghulu, featuring thick-cut bacon coated in a hard sugar shell.

Preheat the oven to 375 degrees F. Lay the bacon strips on an aluminum foil lined baking tray and cook for 10 minutes. Take the strips out, and degrease the pan. Flip the strips and cook for an additional 5-10 minutes depending if you like your bacon chewy or crispy. Pat the bacon with some paper towel to remove the residual grease, and then fit the strips on a wooden skewer. Set them aside. Combine the sugar and water in a pot and bring to a boil. Cook on a low simmer until the sugar and water mixture reaches 300 degrees F. Submerge the bacon in the sugar mixture and when it's fully coated, let some of the sugar drip off before dunking it in an ice water bath for 30 seconds or just until the sugar hardens.
