Crispy and flavorful Yukon Gold breakfast potatoes, boiled then fried with butter, olive oil, and a blend of spices, finished with fresh parsley.

Small dice the Yukon Gold potatoes. Add them to a pot of salted water and boil for 10 minutes. Drain the potatoes thoroughly. Add some olive oil and butter to a medium-high frying pan. Add the drained potatoes and toss them in the olive oil and butter mixture. Cook them without stirring for roughly 3 minutes to allow them to crisp. Toss them again and add the onion powder, smoked paprika, garlic powder, and salt and pepper to taste. Cook, stirring frequently, for approximately 3 more minutes until golden and tender. Finally, mix in some chopped parsley just before serving.
