10 Layer Eggs Benedict INGREDIENTS & RECIPE👇🏻 12 eggs (6 for hollandaise, 6 for poached eggs) 10-15 cooked bacon strips 1 pound cooked breakfast sausage 3 cups cooked hashbrowns (I added peppers and onions) 3 cups grated cheddar cheese 6 large flour tortillas 1/4 cup lemon juice 1/2 cup melted salted butter 1 tbsp smoked paprika 1/4 cup chopped chives (for garnish) Lay three flour tortillas in a large bread pan, overlapping them slightly. Add the bacon (you can chop it, if you want) Layer on 1 cup of grated cheddar cheese and then place another tortilla on top (make sure to cut the layered tortilla to the size of the pan) Add the cooked hashbrowns on top of the first layer, followed by another cup of cheddar cheese Add another layer of cut tortilla to separate the layers Place the cooked sausage on top followed by the grated cheddar cheese, and repeat with another layer of cut tortilla Fold the top closed, cover and cook at 400 degrees F for about 20 minutes Let it cool for an hour in the fridge Slice into thick pieces and pan fry for about 2 minutes on each side before serving For the poached egg, bring a pot of water to a low simmer Use a spoon to create a whirlpool and drop an egg inside Boil for 2.5 minutes and set aside (repeat with as many servings as you like) For the hollandaise, add 6 egg yolks to a bowl and whisk Whisk in the lemon juice until it has one even consistency Whisk in the butter until fully combined Place the bowl over simmering water and continue to whisk for about 3 minutes or until the sauce thickens. Whisk in the smoked paprika Place a slice of the loaf on a plate followed by the poached egg Cover in hollandaise and chives and enjoy
