What you need

tsp salt

pepper

cup cottage cheese

cup all purpose flour

cup turkey sausage

cup greek yogurt

oz protein powder

avocado
cup colby jack

slice turkey bacon

Instructions
For the tortilla: Combine the flour with the greek yogurt and mix until a dough forms. If it seems a bit wet, add some more flour. Separate it into 4 balls and cover and let rest for 10 minutes. After 10 minutes, roll it out as thin as possible, or use a tortilla press. Heat a large skillet to high, and add the flour tortilla on top. Cook for about 2 minutes on both sides or just until it bubbles and gets browned. Set aside. For the eggs: Combine the eggs in a bowl with salt, pepper and the cottage cheese. Mix it well. Add some butter to a medium high pan and when the butter melts, add the egg mixture. Continue to stir the eggs making sure they don’t over cook and cook until a scrambled consistency is achieved. Set aside. To assemble the burrito: Lay down a tortilla. Add the cheese on top. Add the turkey bacon on top followed by the avocado, eggs and sausage. Roll it up. To finish: Cook the burrito on a medium skillet seam side down for about 3 minutes. Turn over and cook on the opposite side. Slice and enjoy.View original recipe
