Indulge in the deliciousness of apple pie transformed into fluffy pancakes, complete with a crunchy streusel topping, warm apple filling, and sweet syrup.
For the crunchy streusel: Combine 1/2 cup of sugar, 1/4 cup of brown sugar, 1/4 cup of all purpose flour and 2 tablespoons of butter in a food processor. Add it to a baking tray and bake it at 400 degrees F for 10 minutes.
For the apple pie filling: Peel and core 2 apples and slice them into 1/2 inch pieces. Combine the sliced apples with 2 cups of water, 1/4 cup of corn starch, 1/4 cup of brown sugar, 1 tablespoon of lemon juice and a tablespoon of cinnamon. Bring it to a boil, then cook the apples for an additional 2 minutes. Set aside to cool. Extract the apple pie filling syrup from the apples and set aside.
For the pancake batter: Combine 2 cups of all purpose flour, 2 tablespoons of sugar, 2 cups of buttermilk, 1 teaspoon of baking powder, 2 tablespoons of melted butter, 2 eggs and 1 tablespoon of cinnamon.
To cook the pancakes: Add about 1/4 cup of the batter to a medium frying pan. Add 1 sliced, cored apple (from your prepared filling) to the center. When the pancake bubbles on top, flip it and cook for an additional 2 minutes.
To serve: Stack the pancakes, add the apple pie filling, syrup, and crunchy streusel.
