Beer Cheese Sauce

Melt 3 tablespoons of butter in a saucepan. When the butter is melted, add 3 tablespoons of all purpose flour and whisk. Once the flour has combined with the butter, add 1 cup of your favorite beer and whisk. When the bubbles in the beer have reduced, add 1 cup of milk and whisk. After about 3 minutes, add 2 tablespoons of grainy mustard, 1 tablespoon of garlic powder, onion powder and paprika. Season with salt and pepper. When the mixture is thick enough to coat the back of a spoon, whisk in 1 cup of sharp cheddar and 1 cup of medium cheddar. Whisk in 2 tablespoons of dry parsley and transfer to a bowl. Dip with soft pretzels or chips and enjoy.
