Breakfast in a Jar: Bacon, Cheese and Mashed Potatoes with Coddled Egg

What you need

ciabatta bread

pepper

cup chicken stock

box instant potatoes

cup fresh chives

cup water

lb bacon

cup cheddar cheese

Instructions
Step 1: Add the chopped bacon to a frying pan. Add 1/4 cup of water to render the fat. Continue to cook the bacon for a few minutes just until all the bits are crispy, about 5 minutes. Step 2: Run the bacon through a food processor to make small bits to mix into the potatoes. Step 3: Add the package of instant potatoes to 2 cups of hot chicken stock and mix until mashed potatoes form. Add the bacon, cheese and chives and season with salt and pepper. Step 4: Transfer the mashed potatoes to a piping bag to easily then add the potatoes to the mason jars. Step 5: Press down the potatoes and create an indentation, then crack the eggs inside. Step 6: Place the mason jars inside a tall pan and add enough water to go 3/4 of the way up the jars making sure no water goes inside. Step 7: Cover the pan and cook the eggs on medium for about 5 minutes or until the egg has cooked to your liking.View original recipe
