What you need

pepper

tbsp ground cumin

cup tomato paste

cup beef stock

cup fresh cilantro

tbsp soy sauce

Instructions
Step 1: Heavily season the beef with salt and pepper and brown it on all sides. Take out and set aside. Step 2: To an instant pot on sear, add the onions, garlic, bay leaves, tomato paste, seasoning (cumin, oregano, coriander), cinnamon stick and saute for a few minutes. Step 3: Add the beef stock and bring to a simmer. Add the peppers and the beef and close the instant pot and cook on high for 45 minutes making sure the valve is sealed. Step 4: Meanwhile, slice the loaf in half and toast it in the oven. Step 5: When the beef is done, and the pressure has been released, take out the beef and set it aside, and strain the liquid from the other ingredients, making sure to save the liquid for dipping. Transfer the rest of the ingredients from the instant pot to a blender and blend until a paste is formed. Step 6: Add some of the paste to the loaf of bread followed by some of the cheese. Add the beef on top with some raw onions and cilantro, and then add a generous amount of the cheese on top. Bake in the oven on 400 degrees F for about 5-7 minutes or just until the cheese is melted and golden brown.View original recipe
