Cheesy Spinach Dip in a Bread Bowl

Cut the top off a small 8 inch bread loaf. Cut out the inside and scoop out the bread to create a bowl. Dice the bread top and insides and toss in a bowl with olive oil, garlic powder, salt and pepper. Bake the bread pieces at 400 degrees F for 15 minutes. Combine 1 cup of chopped cooked spinach, 1 cup of mozzarella cheese, 1 cup of room temperature cream cheese, 1/2 cup of parmesan, 1/2 cup of sour cream, 1 tablespoon of garlic and onion powder. Add the spinach mixture to the bread bowl, cover with 1/4 cup of shredded mozzarella cheese. Bake at 400 degrees for 20 minutes. After 20, broil until the top is browned. Garnish with chopped parsley.
