These delightful biscuits feature a savory filling of ground beef, taco seasoning, onions, and poblano peppers, with a gooey jack cheese center, all encased in a flaky biscuit dough and baked until golden.
Add 1/2 pound of ground beef to a medium-high frying pan and cook until browned. Add 1 small diced onion and 1 small diced poblano pepper and cook for about 5 minutes. Drain the liquid, and add 1/4 cup of taco seasoning, 1/2 cup of beef stock and 1/2 cup of shredded cheese. Add about 1 tablespoon of the meat mixture to each space of an ice cube tray. Place about a 1 inch piece of jack cheese in the center of the meat, and then another teaspoon of the meat mixture on top. Freeze for 1 hour. Flatten out a piece of biscuit dough and press in 1 tablespoon of shredded cheese. Place one of the meat cubes in the center and pinch the dough closed. Place on a parchment paper lined baking tray and bake at 375 degrees F for 15 minutes.
