Chimichurri Sauce

Add 1 chopped red chili, 1 chopped shallot, and 4 chopped cloves of garlic to a food processor. Then, add 1 cup of parsley, 1 cup of cilantro, 1/3 cup of oregano to the food processor and pulse a few times to chop all the herbs. Season the chimichurri with 1 tablespoon of salt and 1/2 teaspoon of cumin. Add 2 tablespoons of lemon juice and 1/3 cup of red wine vinegar and run the processor on puree. Add an even stream of 1/2 cup of olive oil and puree until an even consistency is achieved. Use this with chicken, fish and especially steak!
