Creamy Chorizo Queso

Fry some pork or beef chorizo in a saucepan or pot until browned and cooked through. Add 2 tablespoons of all purpose flour and mix well until no more flour is showing. Whisk in 1 cup of milk and then 1/4 cup of beef stock. Add 1 tablespoon of garlic and onion powder and then 1 teaspoon of cumin, salt and pepper. Whisk in 1 cup of grated pepper jack cheese and then transfer to an oven safe pan. Add 1/2 cup of grated oaxaca cheese, place in the oven on broil until the cheese on top starts to melt. For the chips, cut some corn tortillas in half and then in half again. Add them to a wooden skewer to create a scoop like shape. Fry them, at 350 degrees FR for a few minutes or until they're crispy. Season with salt, garnish the queso with green onions.
