Eggs Benedict Bacon Potato Pie

Preheat Oven to 350 degrees F.

Step 1

Lay out bacon strips on a 12 inch skillet in a circular pattern overlapping each strip until the entire skillet is covered in bacon. You want the strips to be off the skillet somewhat hanging there.

Step 2

Slice 2 russet potatoes into medallion like shapes. Layer enough potatoes to cover the base of the skillet in a circular pattern.

Step 3

Using 1/2 pound of ground sausage meat, make a patty and add it on top of the potatoes. Use your hands to spread it out evenly.

Step 4

Add 1/2 half of a sliced red onion on top of the sausage meat.

Step 5

Add 1/2 pound of shredded cheese on top of the onions.

Step 6

Repeat this process starting with the potatoes again.

Step 7

After the second layer of cheese, add one last layer of potatoes to seal in the deliciousness.

Step 8

Close the tart by folding over the hanging bacon strips until all you see is bacon holding in the rest of the ingredients. Cover the top with parchment paper and then cover that with a lid.

Step 9

Bake in the oven for 3 hours. Every hour, degrease.

Step 10

In an aluminium bowl, whisk together 2 egg yolks with the juice of 1 lemon.

Step 11

Put the mixture over a pot with 1 inch of boiling water.

Step 12

Add 1/2 a stick of melted butter a small amount at a time while whisking the mixing over the heat until it doubles in volume. Make sure to take it off the heat if the eggs begin to scramble. Season it with salt and pepper.

Step 13

5 Minute egg. Bring a pot of water to a boil. Add the eggs and boil for 5 minutes. Take them out and add them to a col water bath.
