Eggs Benedict Roll Ups

Beat one egg with a pinch of salt and pepper. Lightly fry the egg on a medium frying pan. Flatten a slice of bread using a rolling pin. Cut the egg into 4 pieces. Add one slice of egg to the bread, a slice of ham, and a slice of swiss cheese. Roll the bread and coat it in some melted butter. On a plate, combine 1/4 cup of grinded parmesan cheese with 1 tablespoon of chopped chives. Roll the bread in the parmesan cheese mixture. Lightly fry the roll up seam side down for about 2 minutes each side. Enjoy as is or with hollandaise sauce.
