Whisk a few eggs in a bowl with shredded cheese and chopped chives. Add the egg mixture to a frying pan on medium heat and cook for a few seconds, pressing in the sides and spreading out the egg. Add a couple slices of smoked ham to the middle and then a couple of slices of cheese. Fold the sides of the egg into the center and then flip the egg to cook and seal the bottom. Add the egg pocket of ham and cheese to a couple slices of toast, cut and enjoy.
