A delicious Mushroom Toast recipe featuring sautéed porcini mushrooms and shallots, creamy mascarpone spread, toasted crunchy bread, and a sprinkle of Parmesan and fresh herbs.
Thinly slice some shallots until you have about 1 cup. Thoroughly clean some porcini mushrooms and thinly slice until you get 2 cups. Add 1/4 cup of salted butter and 1 tablespoon of olive oil to a medium-high pan, and add the shallots and sauté for a few minutes until soft. Then add 2 roughly chopped cloves of garlic and the sliced mushrooms. Mix for a bit and add 2 tablespoons of chopped thyme and season with salt and pepper. For the cream cheese, combine 1 cup of mascarpone with 1 teaspoon of olive oil and a pinch of salt and pepper. Whip it until it becomes smooth. Slice some crunchy bread about an inch thick, drizzle with olive oil, and toast on both sides until golden brown and crispy. To assemble, add some of the whipped cheese on top, add some of the mushroom mixture, grate some Parmesan cheese on top, add some chopped parsley, and some flaky salt.
