Oreo Carrot Cake

To make the cake, combine 12 crushed carrot cake Oreos with 2 cups of just add water pancake mix, 1 egg, 1/2 cup of Greek yogurt, and 2 cups of water. When the mixture is smooth, mix in 2 cups of shredded carrots. Add the mixture to 2 circular cake pans and bake at 400 degrees F for 30 minutes. Let the cakes cool completely to room temperature.

For the frosting, combine 1 cup of room temperature cream cheese with 1/2 cup of butter, 1 teaspoon of cinnamon, and a splash of vanilla. Mix in 2 cups of powdered sugar and blend until smooth.

To assemble the cake, cut the tops off the cooled cakes to even them out. Add 1/4 of the cream cheese frosting to the top of one cake layer and place the other cake layer on top. Cover the entire cake in the remaining frosting, garnish with some additional crushed Oreos, and enjoy.
