Puff Pastry Pesto Tree

What you need

cup fresh basil

pinch salt

puff pastry

tbsp grated parmesan cheese

cup mozzarella cheese
egg

cup parmesan cheese

cup olive oil

clove garlic clove
Instructions
For the pesto, combine all the ingredients (basil, 1/2 cup grated parmesan, garlic, olive oil) in a food processor or blender and combine until a smooth sauce forms. Season to taste with salt and pepper. Lay out a sheet of puff pastry on a parchment paper lined baking tray. Spread the pesto over the entire surface. Add the mozzarella cheese on top of the pesto followed by 1/4 cup of grated parmesan cheese. Carefully add another sheet on top and gently press down with your hands. Make a cut from the middle of the top, down to the left and right side of the dough to create a triangle. Then additional cuts towards the bottom to make the tree stump. Once the tree shape is formed, make 1 inch cuts from the bottom to the top making sure not to slice it all the way to the middle. Repeat this on the other side. Twist each cut the same way and then paint the entire top with a beaten egg. Sprinkle on the ground parmesan cheese and bake at 450 degrees F for 20 minutes.View original recipe
