Sausage, Egg and Cheese Sandwich

Add about 1/2 pound of ground pork sausage to a medium high frying pan and cook it until it becomes crispy and brown. Combine the hot sausage to a bowl of 4 eggs and 1/2 cup of cheese. Add the sausage and egg mixture to a medium frying pan and cook for roughly 3 minutes just until the egg is cooked and the cheese is melted. While the egg cooks, melt some butter on a frying pan and toast 2 brioche buns for 30 seconds or until they are lightly toasted. Add the eggs to the bun, top with chopped chives and a bit of hot sauce.
