The Ultimate Egg Salad Sandwich

1. Bring a pot of water to a boil.
2. Add 2 eggs. Cook one egg for 6 minutes for soft-boiled and the other for 10 minutes for hard-boiled.
3. Take the soft-boiled egg out and place it in a cold water bath. Using the spoon trick, remove the shell and set aside.
4. After the hard-boiled egg is done boiling, repeat the spoon trick process to remove its shell.
5. Chop up the hard-boiled egg and place it in a bowl with about 1 tablespoon of mayonnaise, 1/4 cup of chopped green onions, and season with salt and pepper.
6. Slice the crust off two slices of white bread.
7. Add some mayonnaise to one slice of bread, and dijon mustard to the other.
8. Cut the soft-boiled egg in half, placing it cut side down on the sliced bread with dijon.
9. Scoop the egg salad (from step 5) on top of the soft-boiled egg and spread it to the edges of the bread.
10. Place the other slice of bread on top, slice the sandwich, and enjoy.
