A creative twist on sweet potato pie, featuring a single sweet potato thinly sliced using skewers, coated in a spiced maple syrup mixture, baked, and topped with toasted marshmallow fluff.
Preheat the oven to 425 degrees F. Cut the ends off a sweet potato. Lay down two skewers on a flat surface. Thinly slice the potato vertically using the skewers to prevent it from cutting all the way through. Flip over the potato and cut it diagonally. Carefully fit a skewer into the potato's center. Combine 2 tablespoons of brown sugar with 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg and 1/4 cup of maple syrup. Coat each side of the sweet potato with this mixture. Bake for 25 minutes. Take the potato out and let it cool for 10 minutes and top with marshmallow fluff. Using a torch or the oven on broil, brown the marshmallow.
