What you need

tsp salt

fl oz water

pepper

red pepper

lb breakfast sausage

clove garlic clove

sweet potato

avocado

cup tahini

onion

jalapeno

tbsp seasoning mix

yellow bell pepper

tbsp lemon juice

tbsp fresh chives

Instructions
Step 1: Dice the potatoes into medium pieces and toss in olive oil, salt, pepper, and a seasoning of your choice. Place in a roasting pan and bake at 425 degrees F for 25 minutes. Step 2: Add the sausage to a medium pan and cook until browned (about 5 minutes). Then add the peppers and onions and continue to cook for an additional 5 minutes or until the peppers and onions are softened. Transfer to a bowl and wipe the pan dry. Step 3: Crack a couple eggs into the pan and cook for about 3 minutes or until you reach a fried egg to your liking. Step 4: For the sauce, combine all the ingredients into a bowl and whisk. If the sauce seems a bit thick, add some water to thin it out. Season with salt and pepper to taste. Step 5: To make the bowl, add some of the potatoes to the bottom of a bowl and some of the sausage mixture on top. Place the sliced avocado to the side, and the fried egg in the middle.
